About Aimee L Frantzen
I'm Aimee, aka The Diabetic Foodie. I was diagnosed with T1D in August of 2011 at the age of 23. I'm what they call a "late bloomer" (it's okay, you can laugh!). Even the doctors were quite surprised that my symptoms didn't even surface until May of 2011 when I began to have strange autoimmune reactions. On one hand, I consider myself extremely lucky to have been diagnosed so late - it's likely that at a younger age I may have had a much more negative approach to maintaining a healthy lifestyle.
Instead of letting this diagnosis define me and keep me from enjoying my love for cooking for family and friends I decided to focus on finding ways to create healthy food that I could eat—and that everyone else would enjoy, too. Diabetes sets no boundaries and limitations on me! Since being diagnosed I have focused my energy on running three half marathons, creating new "comfort foods", and truly learning how what we eat directly effects the way our bodies perform.
I currently live in Chicago where I work as a special education teacher. When I am not teaching, cooking, and blogging I love to go for runs on Lake Michigan's beautiful lakefront, explore the city with my dogs, try new restaurants, travel, and spend time with friends and family.
