Sweet on Apples

Sometimes dinner means a burger and here we use ground turkey stuffed with a bit of skim milk cheddar cheese. Make sure that the turkey you purchase does not have turkey skin ground up with the meat. This adds a lot of fat. The addition of onions, peppers, and apple raises this burger from everyday to good enough for company.

Cheese and Turkey Burgers with Apples, Onions, and Peppers

(makes 4 servings)

1 1/2pounds (600 g) ground white meat turkey
1/2ounce (15 g) skim milk cheddar cheese sliced into very thin slices
1/8teaspoon (0.6 ml) kosher salt
freshly ground pepper
vegetable cooking spray
1large cooking apple such as Braeburn, Granny Smith, or Macintosh, cored and cut into slices
2 ounces (60 g) red onion, thinly sliced
1/2red pepper (2 ounces) cut in julienne strips
4whole wheat rolls
mustard (optional)
low-sodium ketchup (optional)

  1. Shape the turkey into 8 round uniform patties. Top 4 with cheese and top with another patty, pressing the sides of the patty down to enclose the cheese.
  2. Coat 2 skillets with cooking spray. Cook the patties in one skillet and the apple and vegetables in the other until done.
  3. When ready to serve, place a turkey double-patty on each of the 4 rolls, top with apples and vegetables and (if using) pass the mustard and low-sodium ketchup.
Per serving:351 calories (13% calories from fat), 46 g protein, 5 g total fat (1.5 g saturated fat), 30 g carbohydrates, 4 g dietary fiber, 118 mg cholesterol, 345 mg sodium
Diabetic exchanges:5 very lean protein, 2 carbohydrate (1 1/2 bread/starch, 1/2 fruit)
