Breakfast or Lunch for a Bunch

Smoked Salmon Frittata
(makes 4 servings)
| butter-flavored refrigerated cooking spray |
| 1 | teaspoon olive oil |
| 4 | ounces button mushrooms, cleaned and sliced |
| 3 | new potatoes, about 1/2 pound total, (240 g) cut into 1/3 inch dice |
| 2 | scallions, white and 1 inch (2.5 cm) green, thinly sliced |
| 1 | 4.5-ounce (127.6g) package smoked Alaskan salmon, skin removed, flaked |
| 1 1/2 | cups (360 ml) egg substitute |
| 1/4 | cup (16 g) fresh basil leaves, chopped |
| freshly ground pepper |
| 1 | tablespoon (14 g) low-fat cream cheese |
| 1/3 | cup (100 g) non-fat cottage cheese |
| 1 | tablespoon chopped chives |
- Preheat oven to broil. Coat a nonstick 9-inch (22.5 cm) heavy skillet with cooking spray and add the olive oil.
- Over medium heat, sauté the potatoes until they begin to brown. Add the scallions and mushrooms. Cook for another 3 minutes, until the mushrooms begin to cook through.
- Add the flaked salmon and stir to heat through. Add the egg substitute and basil, turn down heat and allow to cook for about 8 minutes until the frittata begins to set. Top with freshly ground pepper. Divide the cream cheese into 8 pieces. Dot the top of the frittata with the cream cheese.
- While the frittata cooks, place the cottage cheese in a blender and puree. Fold in half of the chives. Set aside.
- Place the frittata under the broiler and cool until puffed and browned. Slice into 8 wedges and garnish each slice with a dollop of the cottage cheese mixture. Sprinkle the top with the remaining chives, and serve.

Toasted Whole Wheat Peasant Bread
To cut down on fat when you toast bread, use refrigerated butter flavored spray and coat you slices of bread before placing in the toaster. You'll be surprised how close this comes to the real thing.
