First Signs of Spring

Baked Chicken Breast with Gremolata
(makes 4 servings)
| 4 | 4-ounce boneless, skinless chicken breast halves |
| refrigerated butter-flavored cooking spray |
| 1/2 | cup chopped parsley |
| grated zest and juice of 1 lemon |
| 2 | cloves garlic, minced |
- Preheat an oven to 350°F. Lightly coat a baking dish with cooking spray.
- Remove all visible fat from the chicken breast halves and rinse. Pat dry with paper towels. Arrange the chicken pieces in the baking dish.
- In a small bowl, combine the parsley, lemon zest and juice, and the garlic. Sprinkle evenly over the chicken.
- Cover the dish with aluminum foil and bake for 25 to 30 minutes, until chicken juices run clear when pieced with the tip of a sharp knife (chicken should still be moist).
- Transfer chicken to serving plates and serve hot.
