First Signs of Spring

Baked Chicken Breast with Gremolata

(makes 4 servings)

44-ounce boneless, skinless chicken breast halves
refrigerated butter-flavored cooking spray
1/2cup chopped parsley
grated zest and juice of 1 lemon
2cloves garlic, minced

  1. Preheat an oven to 350°F. Lightly coat a baking dish with cooking spray.
  2. Remove all visible fat from the chicken breast halves and rinse. Pat dry with paper towels. Arrange the chicken pieces in the baking dish.
  3. In a small bowl, combine the parsley, lemon zest and juice, and the garlic. Sprinkle evenly over the chicken.
  4. Cover the dish with aluminum foil and bake for 25 to 30 minutes, until chicken juices run clear when pieced with the tip of a sharp knife (chicken should still be moist).
  5. Transfer chicken to serving plates and serve hot.
Per serving:132 calories (10% calories from fat), 27 g protein, 2 g total fat (0.4 g saturated fat), 2 g carbohydrate, 0 dietary fiber, 66 mg cholesterol, 78 mg sodium, 348 mg potassium
