1 1/4pounds (600 g) coarsely ground white turkey
1teaspoon(5 ml) kosher salt
1 1/2(7.5ml) teaspoons ground pepper, or to taste
2teaspoons (10 ml) chopped fresh sage, or 1/2 teaspoon (2.5 ml) dried
2teaspoons (10 ml) chopped fresh thyme, or 1/2 teaspoon (2.5 ml) dried
1/2teaspoon (2.5 ml) ground ginger
1/2teaspoon (2.5 ml) ground nutmeg
1tablespoon (15 ml) Calvados
1 1/2tablespoons (22.5 ml) finely grated orange zest
olive oil cooking spray
  1. Combine well the turkey, salt, pepper, sage, thyme, ginger, nutmeg, Calvados, and orange zest in a bowl.
  2. Spray a non stick skillet with cooking spray and sauté a small bit of sausage mixture to test for seasoning. Correct if necessary. Form the remainder into 6 patties, about 1/2 inch thick, and sauté until browned on both sides and cooked through. Serve hot from the pan.
