Sautéed Baby Spinach
(makes 4 servings)
|olive oil cooking spray|
|2||scallions, white and 1 inch (2.5 cm) green, chopped|
|1||clove garlic, minced|
|1||pound (480 g) baby spinach, washed well|
- Coat a large nonstick skillet with cooking spray. Add the scallion and garlic. Sauté for 1 minute.
- Add the spinach and sauté until the spinach is wilted. Serve immediately.
