Sautéed Baby Spinach
(makes 4 servings)
| olive oil cooking spray |
| 2 | scallions, white and 1 inch (2.5 cm) green, chopped |
| 1 | clove garlic, minced |
| 1 | pound (480 g) baby spinach, washed well |
- Coat a large nonstick skillet with cooking spray. Add the scallion and garlic. Sauté for 1 minute.
- Add the spinach and sauté until the spinach is wilted. Serve immediately.
