For each serving, top 1/3 cup of fat-free sugar-free frozen lemon yogurt with 1 tablespoon (15 ml) fresh pomegranate seeds.

Exchanges:1 carbohydrate (1 bread/starch).

tip: If you work under water when freeing the seeds of a pomegranate, you won't get the bright crimson juice all over you and the kitchen. Cut the pomegranate into quarters. Place in a deep bowl of water. While working under water, gently remove the connecting pulp to free the seeds. Discard shell and pulp. Drain seeds on paper towels. You can freeze any extra seeds in a heavy-duty self-sealing freezer bag. The seeds will freeze for up to 6 months, separating easily while still frozen to sprinkle onto salads and desserts.
