Purchase 6 clementines or small tangerines. Place a clementine (1 carbohydrate or fruit exchange) and 1 gingersnap on each of 6 dessert plates. Gingersnaps can be purchased (3 store-bought gingersnaps supply 15 grams of carbohydrate and equals 1 carbohydrate/bread/starch exchange). Or, you can bake your own ahead of time, using our recipe.
