Nine years ago, The Joslin Diabetes Gourmet Cookbook first appeared, allowing people with diabetes to enjoy delicious, sophisticated and less restrictive foods with their families for the first time. Winner of the James Beard Foundation Cookbook Award, the book was gratefully received by people with diabetes, physicians, diabetes educators and dietitians, and became a bestseller. Several cookbooks followed. Now co-authors Frances Towner Giedt and Bonnie Sanders Polin, Ph. D. (both of whom live with diabetes) have invited well-known restaurant chefs from all over the world to create their own recipes for a sequel to that first landmark book: The Joslin Diabetes Great Chefs Cook Healthy Cookbook.
The 100 chefs who have contributed more than 130 recipes here include such culinary luminaries as Jasper White (Summer Shack, Cambridge, Massachusetts), Alice Waters (Chez Panisse, Berkeley, California), Michele Guérard (Les Prés d'Eugénie, Eugénieles-Bains, France), Jimmy Schmidt (Rattlesnake, Detroit), Waldy Malouf (Beacon, New York City), Chris Schlesinger, (East Coast Grill, Cambridge, Massachusetts), Mary Sue Milliken and Susan Feniger (Cuidad, Los Angeles), and Peter Gorton (The Horn of Plenty, Tavistock, England).
Organized by courses, the array of delicious, five-star dining options include:
- Starters, Soups and Salads: Dungeness Crab Martini with Picked Cucumbers, Baked Goat Cheese Parcels with Sweet and Sour Leeks, Chicken and Corn Soup, Cream of Artichoke Soup with Lemongrass, Asparagus and Gingered Grapefruit Salad, Spinach Salad with Peppered Walnuts and Black Truffle Vinaigrette
- Small Plates (300 Calories and Under): Asian-Rubbed Chicken Salad, Honeyed Alaskan Black Cod over Portobello Mushrooms and Sautéed Spinach, Herb-Crusted Prawns Over Warm Potato Salad
