Emergency Substitutions

Have you ever started to make a new recipe, or a favorite family dish, and find that you're missing or have run out of an ingredient? We certainly have! Don't despair! Here's a handy list of emergency substitutions to refer to when the occasion arises.

IF YOU DON'T HAVESUBSTITUTE
1 teaspoon allspice1/2 teaspoon ground cinnamon and 1 teaspoon ground cloves
1 teaspoon apple pie spice3/4 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg and 1/8 teaspoon ground cardamon
1 teaspoon baking powder1/4 teaspoon baking soda PLUS 1/2 cup buttermilk or sour milk to replace 1/2 cup of the liquid called for in the recipe
1 tablespoon brandy1/4 teaspoon brandy extract PLUS 1 tablespoon water
1 cup cake flour1 cup MINUS 2 tablespoons all-purpose flour
1 tablespoon cornstarch (for thickening)2 tablespoons all-purpose flour
1/4 cup granulated sugar1/2 cup powdered sugar
1 tablespoon honey4 teaspoons granulated sugar PLUS 1/2 tablespoon water
1 ounce unsweetened chocolate3 tablespoons unsweetened cocoa powder PLUS 1 tablespoon reduced-fat margarine
1 cup buttermilk1 tablespoon lemon juice or vinegar PLUS 1 cup 1% low fat milk (let stand 5 minutes before using)
1 tablespoon chopped chives1 tablespoon finely minced scallion tops
1 cup half & half1 cup evaporated milk
1 cup heavy cream, whipped1 13 ounce can evaporated milk (chilled for 12 hours), PLUS 1 tablespoon lemon juice, then whip until stiff.
1/2 teaspoon cream of tartar1 1/2 teaspoons lemon juice or vinegar
1 whole egg1/4 cup liquid egg substitute
1 fresh egg white2 tablespoons refrigerated or thawed frozen egg whites OR 2 teaspoons dried egg white powder PLUS 2 tablespoons lukewarm water
2 cups tomato sauce3/4 cup tomato paste PLUS 1 cup water
1 three-ounce packaged flavored jello with sugar1 tablespoon plain gelatin PLUS 2 cups fruit juice
1 clove garlic1/8 teaspoon garlic powder or instant minced garlic
1 tablespoon fresh herbs1 teaspoon crushed dried
1 small onion1 teaspoon onion powder OR 1 tablespoon minced dried onion, dehydrated
1 teaspoon dry mustard1 tablespoon prepared mustard
1 teaspoon grated lemon zest (peel)1/2 teaspoon lemon extract
1 teaspoon lemon juice1/2 teaspoon vinegar
1 cup nuts1 cup rolled oats, toasted
1 teaspoon pumpkin pie spice1/2 teaspoon ground cinnamon, 1/4 teaspoon ground cinnamon, 1/8 teaspoon allspice, and 1/8 teaspoon ground nutmeg
1 tablespoon rum3/4 teaspoon rum extract PLUS 1 tablespoon water
1 cup tomato juice1/2 cup tomato sauce PLUS 1/2 cup water
1/2 vanilla bean, scraped1 tablespoon vanilla extract
