Salmon Dinner in a Packet

Another quick way to cook a whole meal without using any extra fat is to cook en papillote. It's easy to do and it looks so pretty -- a large puffy package of parchment paper (you can also use heavy-duty aluminum foil) enclosing boneless salmon atop of a colorful medley of rice, shiitake mushrooms, and red bell pepper, seasoned with the flavors of the Pacific Rim. A salad of baby greens is served alongside, lightly dressed with a light grapefruit sesame dressing. Dessert is frozen lemon yogurt with pomegranate seeds.
