A Family Thanksgiving

Sometimes we, like all people with diabetes, long to have food prepared from family recipes--particularly at holiday time. But, we are NOT prepared to give up the tight control on our blood glucose levels that we have worked hard to achieve.

So, for this Thanksgiving, we turned to our mothers' recipe boxes, adding a few new touches that were unavailable during their lifetime, and came up with a stunning collection of new-fangeled, old-family favorites that will satisfy our need to familiar foods, delight the others around our harvest table, and yet will not knock our blood sugar levels out of whack.

We planned our menu for 10 servings; you can make multiples of the recipes for larger crowds or decrease the recipes accordingly. Since Thanksgiving is a once-a-year celebration with family and a few assorted guests from the outside, we usually opt for our best china, silver, and crystal. For the table centerpiece, we mix fresh and dried flowers with miniature pumpkins and use our whimsical turkey-shaped salt cellars. Since we usually serve dinner at 5 p.m., candles are appropriate. Ever notice how candlelight makes everything look even better and the magic of candles somehow subdues young children to use quieter voices at the dinner table?
