Summer Favorites

How many times have you gone to a back-yard barbecue and had to take chances eating the sweet, sticky sauce that bathes the ribs, chicken and beef? This month, we give you a sauce that everyone will love and that you can eat. If you are a "hot" person, add the optional hot pepper sauce to the recipe and watch the smoke come out of your guests' ears. Cole Slaw from the deli may be very high in fat and sugar. Ours tastes wonderful and won't add too many carbs to your count. We add some fresh corn on the cob, and how about watermelon for dessert? The perfect summer meal without extra sugar and fat.

Our second meal features fresh tuna grilled on the barbecue and served in pita bread pockets with a not-too-spicy fresh ginger sauce. With the tuna burgers, we're serving an old summer time standby, leaned-up potato salad with fresh green beans and red bell peppers. Grill slices of fresh pineapple for dessert with a light sprinkling of dark rum and a smidgen of brown sugar. The slice of pineapple will equal 1 carbohydrate (fruit) exchange.

Sometimes the only thing we, and the kids or grandchildren, want for dinner is a juicy burger and a sweet dessert. Here, we leaned up the burger by mixing ground sirloin with ground lean turkey breast-adding some extras so the result is lean, but oh so juicy and delicious. With the burger, we're serving a quick sauté of fresh corn, onions, and red bell peppers. Since the dinner is done in a jiffy, there's time to make a delicious deep-dish pie, using the best of the fresh berries of the season. Saturday night fare never tasted so good!

Our last meal could easily be expanded to accommodate guests. It features Cornish game hens, first marinated in a Dijon mustard sauce, then grilled to perfection. We've found that half a game hen easily serves one person. You can simplify splitting the game hens in half by calling your butcher first thing that morning (or the day before) to have them split them for you. With the hens, we're serving a wonderful rendition of a French vegetable tian-featuring the first of the fresh zucchini from our garden; plump, ripe tomatoes; and thin slices of potato, baked then topped with Parmesan cheese. Dessert is a combination of kiwi fruit and fresh blueberries. An easy dinner to prepare and a delight to eat!
